Dried Anchovies and Dried Bean Curd Stir Fried

平常晚上一人看電視、影集最愛的常備下酒菜之一,手中一杯冰冰涼涼的啤酒配著充滿醬香、焦香和辣味的小魚干絲,完整的充實了我一天的生活。(這位先生大概早上都沒在上班)
This cuisine is a common dish that goes with beer in Taiwan. Pair with red chilies, all the aroma and spiciness can boost the morale of an exhausted person while drinking.



食材 - What You'll Need

  • 小魚乾 .............. 0.5 / 碗
  • 豆干 .................. 8 / 片
  • 辣椒 .................. 1 / 條
  • 自製辣椒醬 ...... 0.5 / 匙
  • 大蒜 .................. 1 / 瓣
  • 蔥 ...................... 3 / 根
  • 醬油 .................. 2.5 / 匙
  • 醬油膏 .............. 1 / 匙
  • 米酒 .................. 0.5 / 米杯
  • 糖 ...................... 0.5 / 匙
  • 鹽 ...................... 0.5 / 匙
  • 香油 .................. 適量
  • 1/2 cup of dried Anchovies. (need to be pre-hydrated.)
  • 8 piece of dried bean curd.
  • 1 to 2 red chilies.
  • 2 cloves of garlic.
  • 1 scallions.
  • 2 teaspoons of olive oil.
  • 2 teaspoons of soy sauce.
  • 1 teaspoons of soy paste.
  • 1 teaspoons of Chinese cooking wine. (a.k.a. rice wine.)
  • 1/2 teaspoons of salt.
  • 1/2 teaspoons of sugar.
  • 1/2 teaspoons of sesame oil
  •  a pinch of white pepper powder. 


STEP 1
  • 豆干側面對剖再切絲。
  • slice all the dried bean curd.
  • 蒜頭切片、辣椒斜切片、蔥切段。
  • mince all garlic, slice red chilies and section scallions into 2 inch long.

STEP 2  
  • 在鍋中冷油起鍋,先將小魚乾煸香,之後倒入大蒜、辣椒炒到各材料的香味都散出,再倒入豆干均勻拌炒。
  • Drizzle olive oil to the pan over medium heat. Add in all dried Anchovies and keep stir-firing till all little fish appear nearly dried up again. It would need a few minutes util all fish is colored and the texture is being little crunchy. Afterward, turn on the heat and add garlic, chilies, and scallions. Cook util all ingredients are fragrant. Last, tossing all dried bean curd to the pan and give it a quick stir. 

STEP 3 
  • 所有材料拌炒均勻後,加入一小杯的水(或米酒)、辣椒醬、醬油膏、醬油、糖、鹽,迅速拌炒,炒至豆干表面均勻上色、水分收乾且有明顯醬香味,起鍋前再灑上適量香油便可起鍋囉!
  • Adding some flavoring including soy sauce, soy paste, salt, sugar and white pepper powder. Mix them with all ingredients gently.  After the dried bean curd is absorb all seasoning, drizzle the Chinese cooking wine and the sesame oil. And it is ready to be served.



小撇步
  • 醬油主要是上色用和帶出醬香氣,每個品牌的醬油顏色深淺不同,建議可以適當調整醬油的量喔!
  • 如果想吃高級一點的作法,可以將豆干那去過油炸,會變得酥脆,豆干的豆香味也會更容易出來,但我實在太懶惰起油鍋了...,不過豆干先煸炒過也是有同樣功用,差別只是香氣的輕與重。

我會「盡量」在每篇食譜的最後加上一篇與當篇相關的豆知識,小小步驟可以簡單進階料理喔~!

這一次我想談的是「小魚乾」,其實就是丁香魚,根據捕撈時期的不同,才會有我們看到這麼多不同體型的小魚乾,通常夏季是丁香魚最肥美的時候,漁民在打撈時會在船上做灶,將剛打撈上的丁香魚煮熟保持鮮度,回港後再將其曬成乾,也就成了我們常見的小魚乾。

丁香魚除了大家常知道的富含豐富的「鈣」,每天只要吃下15克的量,就能獲得超過1/4的鈣質應攝取量,還有DHA、EPA能預防心血管疾病,是非常好的食材,除此之外,別看牠體型小小,丁香魚的蛋白質含量相當豐富,100克的丁香魚,就含有62.29毫克的蛋白質,喜歡健身的人也可以選擇此食材做為健身餐的材料喔,但要注意的是,牠同時也是高普林的食物,有痛風疾病的人不僅在急性期要忌口,平日攝取的量也不宜太多。
